Iced tea ICED TEA
1,2 l water
5 - 6 tea bags of black tea (plain or flavoured,
eg Earl Grey)
1 - 2 tbsp sugar (or to taste)
4 thin slices of lemon
(slices or pieces of lemon or other fruit for garnish)

Make sure to use a good brand of tea bags, ie within which the tea is similar in consistency to any good-quality loose tea, and not crushed and/or powdery. Otherwise, use about 10 teaspoons of good-quality black loose tea, like Assam.

Place the tea bags or the tea leaves in a heatproof bowl, pitcher or some other container. Bring the water to the boil and pour over the tea. Let steep for about five minutes, then remove the tea bags or strain out the tea leaves. Depending on the variety, some teas turn too bitter if steeped longer.

Add some sugar and the lemon slices and stir until sugar has dissolved. (Sugar and/or lemon can be omitted.) When the mixture is cool enough, cover the container and place in refrigerator. Strain the chilled mixture and serve from tall glasses with ice, garnished with a slice of lemon or with slices or chunks of other fruit.
