This is a rather mouth-puckering after-dinner cocktail, inspired by a cocktail created by Dita Von Teese for Cointreau.
If you find it too sour to your taste, use some sweeter apple variety and decrease the amount of lime juice.
3 cl Cointreau
5 cl freshly pressed juice from Bramley or Granny Smith apple (see instructions below)
2 - 3 cl freshly squeezed lime juice
1 - 2 tsp Canadian maple syrup
pinch of powdered cinnamon
Peel and core the apple. Grate it using a medium-coarse grater and wrap the grated apple inside a small piece of clean cheesecloth. Squeeze to extract the juice in a small bowl beneath. Strain the juice through a tea strainer, if necessary, to remove any cloudy bits. Discard the pulp left behind. If preparing a larger quantity, it might be more convenient to use a juicer.
Pour the Cointreau, apple juice, lime juice and maple syrup over ice in a cocktail shaker. Place the lid on, shake and strain in a chilled cocktail glass. Sprinkle a bit of powdered cinnamon on top and serve.
