ELDERFLOWER TONIC

Elderflower Tonic This no-frills, refreshing drink for adult palates is perfect to be enjoyed on a hot summer afternoon.

Note: many IKEA stores sell a nice brand of elderflower syrup and drink  —  during the summer of 2018, the syrup could be found sold in many IKEAs, including the UK and U.S.A. stores, under the name "Dryck Fläder" and article number "402.960.14".

crushed ice
2 tbsp (30 ml) good-quality elderflower syrup  — 
eg from your local IKEA store
180 - 200 ml Schweppes Indian Tonic or similar tonic water
slice of lemon or lime

Fill a large glass or tumbler (those ridiculous, sturdy "hipster-latte-glasses" would be perfect) about two-thirds full with crushed ice. Pour in the elderberry syrup. Add the tonic carefully, little at a time to prevent it from foaming over. Stir gently with a stirrer or spoon and drop in the citrus slice. Serve with a straw.

For a grown-up version, add gin to taste  —  either bone-dry London type or floral and fruity, like Bombay Sapphire  —  or try vodka, tequila, pisco, cachaça, light rum, etc...
