WALDORF SALAD Waldorf salad
3 - 4 apples (sweetish red or slightly acidic green, according to your liking)
150 g celery root
100 ml shelled walnuts
150 ml crème fraîche or sour cream
50 ml mayonnaise
pinch of sugar
lemon juice
lettuce (
eg butterhead)

Core, peel, quarter and thinly slice one apple. Brush the slices generously all over with lemon juice to prevent discoloration. Cover with plastic wrap and set in refrigerator.

Peel the celery root and the apples and cut into small dices, about 1 × 1 cm in size. Sprinkle the apple dices with lemon juice to prevent discoloration. Cook the celery dices in boiling water for 5 - 10 minutes, shock in ice-cold water to stop cooking and drain thoroughly. Mix the celery and apple cubes with the sour cream and mayonnaise. Season with sugar.

Rinse the lettuce, tear the leaves apart and pat dry. Arrange the leaves on the bottom and sides of a salad bowl. Spoon the salad in the centre of the bowl. Arrange the thin apple slices on the surface of the salad and sprinkle the coarsely chopped walnuts on top. Serve immediately.

Serving suggestion:
To vary the taste of this salad, season it with curry powder and add banana slices or red grape halves in it. To make the salad more filling, add pieces of cooked chicken in it.
