Pasta sauce with smoked salmon PASTA SAUCE WITH SMOKED SALMON
400 g cold-smoked salmon
1 medium onion
200 ml cream
200 ml crème fraîche (or soft cream cheese)
2 tbsp freshly grated Parmesan cheese
white pepper

Finely chop the onion and sauté it lightly in some butter in a pan. Cut the salmon into thin strips and add to the pan. Stir for a while until the salmon strips turn opaque. Add the cream and the crème fraîche (or cream cheese) and bring to the boil. Meanwhile, cook some spinach-flavoured tagliatelle-pasta until tender.

Add the Parmesan, reduce the heat and let the sauce simmer for 5 - 10 minutes  —  or until it thickens  —  stirring gently. Mix in the drained pasta to absorb some of the sauce. Pour the mixture in a serving dish or divide on plates. Sprinkle with grated Parmesan and garnish with fresh basil sprigs.
Serves 2 - 4.
