NOODLES WITH CHAR SIU PORK
½ portion of char siu pork
about 200 g dry egg noodles
1 large garlic clove
5 cm piece of ginger
4 - 5 small spring onions
about 100 g snow peas
about 100 g shiitake mushrooms
3 tbsp peanut oil
2 tbsp oyster sauce
½ tbsp Chinese light soy sauce
1 - 2 tsp hoisin sauce
If you prefer a sweeter taste, replace the sauce ingredients with teriyaki sauce.
Start well in advance by marinating and cooking the char siu pork according to the instructions given here. After brushing the meat with honey, cover it loosely and set aside to wait.
You can also prepare the char siu pork on a previous day and reheat it in the wok before continuing with the rest of the ingredients.
Peel the garlic clove and ginger and cut in very thin threads. Cut the spring onion in 5 to 7 centimetre long pieces, halve them lengthwise and cut in thin threads. Cut off the mushroom stems and discard them. Cut the mushroom caps in slices.
Cut snow peas in smaller pieces. You can blanch them rapidly, if you like.
Mix together the ingredients for the sauce. Cut the char siu pork in slices. Cook the noodles according to the instruction on the package and let them drain.
Heat a wok until smoking hot. Prepare to work very quickly. Pour the oil in and swirl it around the edges of the wok. Add the garlic and ginger and stir-fry for a few seconds, then add the mushrooms, stirring frequently.
After a while, add the snow peas and finally the noodles. Stir-fry for a while, then add the sauce. Keep stirring until all the ingredients are heated through.
Pour the mixture on a wide serving platter and place the sliced char siu pork on top. Serve with good tea.
