SCRAMBLED EGGS WITH SMOKED REINDEER

Scrambled eggs with smoked reindeer Like smoked fish, (smoked salmon, eel, Baltic herring, etc), soft and succulent Finnish smoked reindeer roast forms a delicious combination paired with creamy scrambled eggs.

1 portion of scrambled eggs
a few thickish slices of smoked reindeer roast
(chopped fresh chives, green onion or scallion to garnish)

Preferably buy your smoked reindeer roast in one piece rather than readily sliced, as some brands of packed sliced reindeer roast tend to be tough and leathery. Vacuum-packed smoked reindeer roast pieces of varying sizes are sold in most good-quality Finnish grocery stores, as well as at the Helsinki-Vantaa airport.

Cut the reindeer roast slices in small cubes, removing any sinewy bits.

Prepare the scrambled eggs following the instructions given here.

As soon as the egg mixture starts to scramble, delicately stir in the reindeer meat. Stir until warmed through (smoked reindeer roast does not need cooking), sprinkle with scallion and serve with or on a slice of hot buttered toast.
Serves 1, or 2 as an appetizer.
