CHEDDAR CHEESE SAUCE
3 tbsp crème fraîche
150 g grated strong and mature Cheddar cheese, preferably orange-dyed

Using orange Cheddar will produce a nicely coloured sauce.

On a low heat, warm the crème fraîche in a small saucepan and add the grated cheese. Stir until the cheese has melted and the sauce is smooth and shiny, not letting it boil or burn on the bottom.

Serve the sauce warm with various Tex-Mex dishes, like filled tortillas and tacos, or as a dipping sauce for vegetables/crudités, French fries/chips or crisps/chips.
