175 ml sugar
125 ml water
30 g cocoa powder
½ tsp vanilla sugar
Place the cocoa powder in bowl. In a saucepan, dissolve the sugar in the water on low heat, stirring continually.
After the sugar has melted, increase the heat and bring the syrup to the boil. Pour the hot syrup on
the cocoa powder in thin stream and whisk until smooth.
Pour the mixture back in the saucepan and boil for 1 minute, beating continually. Pour the mixture in a bowl and let it cool. Season with vanilla sugar.
Use as a sauce for desserts or to flavour milk, milk shakes and drinks. Store the syrup bottled in refrigerator for up to 1 week.
