AUNT HANNAH'S CAKES
100 g butter
100 ml cream
150 ml sugar
1 tsp baking powder
250 ml flour
150 ml potato flour
Melt the butter and let it cool slightly. Sift and mix together the flour and the baking powder.
Stir together the cream and sugar, add the melted butter and mix until smooth. Finally stir in the mixture of flour and baking powder and mix by hand until a smooth and shiny dough is formed.
Roll the dough into small balls (about 3 cm in diameter) and place them on a baking sheet covered with parchment paper, leaving some space between the balls (see the picture on right).
Bake at 200 °C for 8 - 10 minutes. The cookies must not brown but should remain rather light in colour. Cool the cookies on a wire rack.
Aunt Hannah's cakes have a light and ethereal texture and should not be chewy.
Makes about 30 - 35 cookies.
