Praline Similar to nougatine, praline  —  pralin  —  is made by mixing toasted nuts (usually blanched almonds or hazelnuts) with hot caramelized sugar. The hot mixture is spread in a layer on a greased baking sheet or other surface and left to cool and harden.

Praline is either cut to pieces, chopped or powdered in blender and used as a flavouring in creams, custards and ice creams, as filling in sweets or just eaten plain as candy.
