GRILLED TENDERLOIN STEAKS
Steaks cut from premium well-aged beef tenderloin are best when grilled very briefly and served almost rare.
A flat lava stone grill is ideal for preparing this dish.
about 2 cm thick beef tenderloin steaks
The meat used should be very tender. Grill the steaks briefly on both sides on a charcoal barbecue, gas grill, lava stone etc. Sprinkle the steaks with salt.
Serve the steaks immediately with cooked new potatoes, radish and green onion salad, pickled herring and a dollop of smetana, créme fraîche or sour cream.
